List of ingredients

  • For the dough
  • 275 gr flour
  • 1½ tsp baking powder
  • zest of ¼-½ lemon
  • ¼ tsp salt
  • 1 tlvanilla extract
  • 135 gr white castor sugar
  • ½ egg, beaten
  • 185 g butter, at room temperature
  • For the filling
  • 125 gralmond paste
  • ½ egg, beaten
  • 5-6 large gold renets or jonagolds, peeled, cored and cut into wedges
  • 2 tsp cinnamon powder
  • 3 the custardpoeder
  • 2-4 tbsp white or brown caster sugar
  • 60 g dark raisins
  • For the topping
  • 225 g unsalted and unroasted nuts (for example a combination of almonds, hazelnuts, cashew nuts, pecan nuts)
  • Further needed
  • butter, for greasing
  • 100 g of apricots

Apple nut pie recipe

This recipe for the apple nut pie is easy to make yourself using the following steps.

Make pie dough

Place all the ingredients for the dough in a bowl and knead into a cohesive dough. Don't knead for too long: as soon as you can form the dough into a ball, it's good. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Preheat the oven to 180°C. Grease a 24 centimeter springform pan with butter and line the bottom with a piece of baking paper. Knead the dough briefly and roll it out to a thickness of 4 millimeters. Line the bottom and sides of the springform pan with this.

Make filling

Mix the almond paste with the egg and spread the paste over the dough base.

Then put the apple slices in a bowl and mix them with the cinnamon, custard powder and caster sugar. Is everything mixed well? Then add the raisins and put the apple filling in the pie tin. The top of the cake remains uncovered; the nuts only appear after baking. This way they stay nice and crispy.

Baking apple nut pie

Bake the apple pie slightly below the center of the oven for 65 to 80 minutes until golden brown. Can you set your oven to 'bottom heat only'? Then use that function for the last ten minutes so that the base is really well cooked. Remove the cake from the oven and let it cool, but leave the oven on.

Spread the mixed nuts on a baking tray lined with baking paper and roast them for 9 to 13 minutes at 180°C until golden brown. Let them cool.

Finishing the apple-nut pie

Place the apricot jam in a saucepan and heat it while stirring. Spread the cooled apple pie with the warm apricot jam. Divide the roasted nuts over the cake and brush them with the apricot jam to make them shine nicely.

That's possible, but I wouldn't completely replace it with Zeeland flour. The dough then becomes very brittle and crumbles more quickly.

Made this cake today and... too delicious!! The people I shared it with thought so too. The nuts complete the already delicious cake. Wonderful, this will be on the favorites list!
I still had some food in the freezer that I had made for the previously baked rondos and mixed it with egg according to the recipe.

Only self-raising flour contains too much baking powder. You can use half regular flour and half self-raising flour. But then flour with baking powder is easier, I think.
