Apple nut pie recipe

This recipe for the apple nut pie is easy to make yourself using the following steps.

Make pie dough

Place all the ingredients for the dough in a bowl and knead into a cohesive dough. Don't knead for too long: as soon as you can form the dough into a ball, it's good. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Preheat the oven to 180°C. Grease a 24 centimeter springform pan with butter and line the bottom with a piece of baking paper. Knead the dough briefly and roll it out to a thickness of 4 millimeters. Line the bottom and sides of the springform pan with this.

Tip: see more explanation aboutroll out dough without tearing.

Make filling

Mix the almond paste with the egg and spread the paste over the dough base.

Then put the apple slices in a bowl and mix them with the cinnamon, custard powder and caster sugar. Is everything mixed well? Then add the raisins and put the apple filling in the pie tin. The top of the cake remains uncovered; the nuts only appear after baking. This way they stay nice and crispy.

Baking apple nut pie

Bake the apple pie slightly below the center of the oven for 65 to 80 minutes until golden brown. Can you set your oven to 'bottom heat only'? Then use that function for the last ten minutes so that the base is really well cooked. Remove the cake from the oven and let it cool, but leave the oven on.

Spread the mixed nuts on a baking tray lined with baking paper and roast them for 9 to 13 minutes at 180°C until golden brown. Let them cool.

Finishing the apple-nut pie

Place the apricot jam in a saucepan and heat it while stirring. Spread the cooled apple pie with the warm apricot jam. Divide the roasted nuts over the cake and brush them with the apricot jam to make them shine nicely.

This one looks delicious! Now I don't like almond paste, can you replace that with something else? Thank you in advance!

You can also sprinkle some crumbled cake or, for example, gingerbread cookies over the base instead of the almond paste mixture.

Can flour be replaced here with Zeeland flour? Or because you add baking powder, right?
Looks delicious!!!!!!

Rutger2021-04-12 10:53:57

That's possible, but I wouldn't completely replace it with Zeeland flour. The dough then becomes very brittle and crumbles more quickly.

Looks delicious, I'm going to make it. But one more question about making the dough: do you mix everything in the beginning with a mixer with dough hooks or immediately with your hands?

Rutger2021-04-26 13:00:16

It's possible to do both.

Made this cake today and... too delicious!! The people I shared it with thought so too. The nuts complete the already delicious cake. Wonderful, this will be on the favorites list!
I still had some food in the freezer that I had made for the previously baked rondos and mixed it with egg according to the recipe.
Do you have a tip on how to make it easier to spread the almond paste over the base?

To answer

Rutger2021-08-16 14:39:07

You can soften the dough a little with some egg, so that you can spread it well.

Hi Rutger, I'm going to make this cake tomorrow. I was wondering if I should wind-dry the raisins or do you not want that so that they absorb some moisture from the apples? M curious!

To answer

Rutger2021-10-24 12:39:48

Hi, They can simply be dry, so that they absorb the moisture from the apples.

Looks delicious and I want to make it. Can you also replace the flour with baking powder with self-raising flour?

To answer

Rutger2021-11-10 08:32:58

Only self-raising flour contains too much baking powder. You can use half regular flour and half self-raising flour. But then flour with baking powder is easier, I think.

And what effect does that have if you use self-raising instead of flour with baking powder?

Mine is cooling now, made with self-rising 🙈

You can also grate the almond paste on a coarse grater and then spread it over the dough. Quick and easy.

Can you also use walnuts for this? I like the nut tree quite a lot... And can it also be done with another type of apple? Elstar?

To answer

Rutger2022-05-22 17:47:43

Both are fine! You can vary a lot with it.

Why do you only sprinkle the nuts over the cake after baking instead of adding them to the apples?

To answer

Rutger2022-09-19 11:59:23

If you do that, they won't be as nice and crunchy, and I really like the contrast with the soft apple filling and the crunchy roasted nuts about this cake.

I have made it before, I was full of praise, my family thought it was very tasty, I add plenty of custard powder, add water myself, and take the packs of Koopmans ready-made apple pie myself.
