Good morning and happy Wednesday! AlthoughNatalehas passed, I still want to share the (original) recipe that I used this year to prepare the Christmas biscuits par excellence,gingerbread men or gingerbread men.

I already showed you in the pasta recipe for making gingerbread, I defined it as "my way" precisely because it had little in common with the original recipe. Even those biscuits were very good and fragrant, but these, without a shadow of a doubt, have something extra!

I'm sure hegingerbread menthey need no introduction and I think it's clear that I adore them. I enjoy preparing them, decorating them and clearly I like eating them, after all, it is known that I have a certain addiction to spices.

But enough chatter, I'll leave you to the recipe: fire up the stove! 😉

Gingerbread man or gingerbread men, ingredients and procedure


For the biscuits

  • 370 g of 00 flour
  • 120 g of cold butter from the fridge
  • 120 g muscovado sugar*
  • 60 g di golden syrup*
  • 1 medium egg cold from the fridge (about 50 g)
  • 6 g of bicarbonate
  • 2 teaspoons powdered ginger
  • 1 teaspoon ground cinnamon

For decoration

  • Powdered sugar
  • Lemon juice
  • Cold water

*In the notes I will explain how to replace the ingredients and tell you something more about the icing for decoration.


Prepare the cookie dough

  1. Pour the flour and bicarbonate of soda into a large bowl, add the butter in cubes and work with your fingertips until you obtain a sandy dough.
  2. Add sugar, spices and mix.
  3. Break the egg into a smaller bowl, add the golden syrup and mix to combine the two ingredients.
  4. Take the large bowl again, add the egg and golden syrup mixture and work until you obtain a compact and non-sticky dough.
  5. Finally, wrap the dough in cling film and let it rest in the fridge for at least an hour.

Prepare and bake biscuits

  1. Once the resting time has elapsed, roll out the dough on a lightly floured surface until it is half a centimeter thick and use a biscuit cutter to shape the gingerbread men.
  2. Once you have obtained the biscuits, place them spaced apart on a baking tray covered with baking paper and let them rest in the fridge for about ten minutes.
  3. Finally, cook in a preheated oven at 180°C for about 10 minutes or, in any case, until the bottom of the biscuits is slightly golden.
  4. Cool completely on a wire rack.

Prepare the icing and decorate the cookies

  1. Pour 10 tablespoons of icing sugar, a few drops of lemon juice and 2 tablespoons of cold water into a bowl.
  2. Work the mixture with a fork until you obtain a smooth cream. Add a few drops of water only if necessary and in any case always add a little at a time.
  3. When the biscuits are very cold, decorate them with the prepared icing.
  4. Let the decorations dry well before storing or giving the gingerbread men or gingerbread men as gifts.

Tips and notes

Lomuscovado sugar, dark and fragrant, is obtained by adding a percentage of molasses to unrefined cane sugar, which gives it its characteristic slightly spicy flavor (in my opinion, it tastes a little like liquorice) and a slightly moist consistency. I can now easily find it even in "normal" supermarkets, in which case I advise you to ask in organic shops. If you really want, replace it with brown sugar, but in this case it may be necessary to add a few drops of water to the mixture.

Ilgolden syrupit is a typically British sweet syrup (but also used quite a bit in America), made from water, sugar and lemon. The consistency is liquid and the flavor can vary depending on the type of sugar used. You can prepare it at home or buy it in well-stocked supermarkets or on the internet. If you want, you can replace it with the same amount of honey or maple/agave syrup. But be careful, even in this case it may be necessary to add a few drops of water to the mixture.

The icing that is used to decorate these and almost all biscuits isroyal icing, I'll tell you about it inthis recipe. It is a preparation based on icing sugar and egg white (absolutely pasteurized), has a much more consistent structure than thesimple icethat I show you in this recipe, so it lends itself well to elaborate decorations. Choose which one to use based on the decorations you want to obtain. Remember, however, that both icings dry quickly if exposed to air, so I recommend covering the bowl with a damp cloth even during the decoration phase.

Perdecorate the biscuitsI used a toothpick and a pastry bag with a 00 nozzle, the writing one.

Remember to let the dough rest well before rolling it out and don't skip resting the biscuits in the fridge, only in this way will you get little men fromimpeccable shape.

Gingerbread men or gingerbread men, if well closed in an airtight container or in tin boxes,they also keep for 15-20 days.
