I also sometimes don't feel like cooking (well, you would almost think otherwise with such a food blog full of recipes, but it happens very occasionally). But then I also want tasty, easy and healthy food and then I often go for an easy tray bake. Today I share the recipe of one of my favorites with you: a delicious traybake with potato, vegetables and marinated chicken with a Greek twist.

You really don't have to make it more difficult for a tasty, quick meal. Don't be put off by the 'preparation time' because it may take you 10 minutes to make it all together. The oven will do the rest for you!

What is a tray bake?

A traybake is a dish that you bake on a baking tray in the oven. I made a delicious traybake with potatoes, vegetables and chicken, but of course you can go in any direction with it. My version is inspired by an evening of AGV (Potato, Vegetables & Meat (Fish or Vega), but super easy and you don't have to worry about much. And yet healthy because there is a batch of vegetables in this recipe, delicious!

Lots of vegetables

If possible, I try to eat at least 250 grams of vegetables per day. I often start with lunch: a nice salad or some cucumber, raw vegetables or tomato on bread. In the evening I try to include as many vegetables as possible in the meal itself and if that doesn't work, I prefer to serve it with a nice fresh salad. It's not difficult to get those 250 grams, you just sometimes have to plan a bit. With this tray bake with potato, vegetables and chicken you can easily save the 250 grams per person for dinner because it contains zucchini, onion, pepper and lots of snack tomatoes. If you have some leftover other vegetables in the refrigerator, you can also add them, such as eggplant, beans or cauliflower florets, for example.

Potatoes: to peel or not to peel?

Apart from the fact that peeling takes extra time, you don't always have to peel your potatoes. I do it for some dishes, for example when I want to make creamy mashed potatoes. But with these types of dishes? Not really! There is a lot of fiber in the skin of potatoes and with today's thin skins it is really not necessary to peel them. (Source: knowledge platform from potatoes). I also find it extra tasty to leave the skin on. This time I chose to cut raw potatoes into wedges, then you have to pre-boil them for a few minutes. Of course, you can also opt for convenience and buy ready-made potato wedges. Nowadays you can also buy them with their peel, ideal!

Enough chatting! Time to give you this delicious, easy recipe for a traybake with potato, vegetables and chicken. An easy, colorful and healthy meal with a Greek touch thanks to the chicken marinade and the feta that I crumbled over it. That gives extra flavor, delicious!

Easy recipe for a delicious and healthy traybake with potato, vegetables and chicken. With a touch of Greek and lots of vegetables.

What you need (ingredients):

  • 750 gram potato wedges (pre-cooked)
  • 75 gram feta
  • a few hands snack tomatoes
  • 2 courgettes
  • 1 yellow bell pepper
  • 1 rode ui
  • 2 teaspoons oregano
  • olive oil, salt and pepper

For the marinated chicken

  • 600 gram kip (chicken thigh fillet or chicken wings)
  • 3 they have garlic
  • 1 tablespoon Greek yoghurt
  • 1 tablespoon honing
  • 2 teaspoon lemon juice
  • 4 teaspoons oregano
  • 2 teaspoons paprika powder
  • 2 teaspoons cumin


HOW TO MAKE IT (preparation method):

  • Marinate the chicken with all the ingredients for marinated chicken and add (plenty of) salt, pepper and a little olive oil to taste. Preferably let the chicken marinate in the refrigerator for at least an hour or overnight.

  • Preheat the oven to 200 degrees top and bottom heat.

  • Season the potato with salt, pepper and oregano.

  • Divide the potato over the baking tray together with the chicken. Make sure that everything is free, so that nothing overlaps so that the potato can become nice and crispy.

  • Place in the oven for about 30-45 minutes until the potato and chicken are almost done. Toss everything halfway through and make sure that not too much moisture comes off the chicken (if necessary, remove this with a paper towel).

  • In the meantime, cut the vegetables: zucchini into half slices, halve the snack tomatoes or leave them whole, cut the red onion into half moons and the pepper into thin strips.

  • After 30-45 minutes, divide the vegetables over the chicken and potato and bake for another 15-20 minutes until done and the potato slightly crispy.

  • Just before serving, crumble some feta over it. Enjoy your meal!

        Unfortunately. Did not succeed. I followed the recipe completely. Chicken was almost burnt and dry.

    Made this recipe yesterday. It was quite tasty, but the chicken was quite dry and blackened. Since we definitely want to make it again, what did we do wrong? Maybe the oven setting/temperature?

      I almost never use hot air (otherwise it is explicitly mentioned in the recipe) so next time just try top and bottom heat. Most recipes are written for top and bottom heat and not on hot air (hot air should therefore be lower in relation to top and bottom heat).

          The basic oven setting is always top and bottom heat. Many dishes do not cook well or cook too quickly with hot air.

      No, I just put them in the middle. Not every oven works very well if you place things directly on the bottom due to the heat distribution of the oven itself. So I personally wouldn't recommend that πŸ™‚

    Thanks for your quick answer Eef! Tasty recipe, but next time I think I'll add the chicken thigh fillet for a maximum of half an hour. It was now really too dry at 200 degrees top and bottom heat for 45 minutes. Maybe it is due to the fact that I have a good new oven, I think I will use it at 180 next time.

      Yes, that is possible, your oven can be a bit stronger. Feel free to make it a little shorter. As long as the chicken gets cooked, that's the most important thing πŸ™‚

    Last night I made the Tray Bake, I just didn't read carefully beforehand and it was already 6 pm when I started making dinner ???? so 2 times 30-45 minutes we were not going to make it ????. In short: I put the potatoes in the oven and first fried the chicken in the pan, then added the vegetables, put the lid on and baked them in the oven at the same time as the potatoes for about 30 minutes. It wasn't too much effort, just stir it through the pan every now and then. It was really delicious, we said this to each other a few times while eating. So good! NB I am lactose intolerant so I used lactose-free cottage cheese instead of Greek Yogurt. So I don't know the difference, but this worked perfectly! Thank you for the delicious recipes Eef!

    Very tasty in itself and I will definitely make it again. I only found the meat dry.
    Possibly 200gr is a bit too warm and I have to grease the plate... Because everything stuck. Baking a little shorter may also be an option…

      Adjusting the temperature slightly helps and using chicken thigh fillet. Chicken fillet simply dries out much faster

    Worth repeating. I only had a bag of oven vegetables and a bag of potato wedges with skin. Nothing pre-cooked. Kids don't like feta. So about half of the feta was done. Don't rest.

      How nice to hear! I have some tips for this: make sure everything is well separated from each other, don't use baking paper and use good quality tomatoes. If there is still a lot of liquid, you can also add the tomatoes later. But a little moisture is normal!

    Hi Eef, delicious recipe, but the baking time for the chicken was too long. Moreover, the chicken (French free-range chicken) generated a lot of moisture. I just poured that off. I will definitely make this again, but with a shorter baking time.

      The moisture can indeed differ per type of chicken, but with organic chicken you usually have less problems with it.

    A wonderfully tasty recipe! I cut the chicken thigh into strips and put them in the refrigerator overnight with the herbs, etc. I took sweet potatoes and with the salty feta on top it tasted very tasty. The oven at top and bottom heat 175 degrees and in 30 minutes it was done and the chicken was nicely browned. This will definitely be on the table more often!
